Potato Soup with bacon by Maggie

Serves 4-6
****Any veggies you don't want in your soup.... substitute it with the same quantity of potatoes**
6 c. potato, chopped small
1 c. carrot, chopped
3/4 c. celery, chopped
3/4 c. onion, chopped
1/2 c. frozen corn
8 c. milk
3 Tbsp. chicken boullion (I like Knorr powdered chicken bouillion mix)
3-6 slices thick sliced bacon, cooked

Boil carrots, celery and onion till carrots are almost cooked. Drain water then add more water to pot and add potatoes and frozen corn.  When cooked drain all but 1-2 cups of water. Add 6 c. milk and about 3 Tbsp. chicken boullion.  Add bacon pieces.  Taste broth to see if you need to add more bouillion. Let simmer on low about 15 minutes.  This is delicious with dinner rolls.

I am way new at the freezer meals! I only cook for myself, and I like to cook meals and freeze them individual so that I can take them with me to work and eat them throughout the day. Do you think I could freeze this soup and then let it thaw and reheat it in the microwave?

Yes! That is exactly how you can do it. Potatoes do change in texture slightly. They get slightly grainy, but still good. I freeze potato soup all the time. Just make sure you dice them small.
